New Year's Dip


So all the neighbors (well actually just the social ones) get together in the Cul De Sac for New Year's. The highlight of the night is the burning of the Christmas trees. Apparently a few years ago they burned about 20 trees in a "fire pit". The fire pit makes it legal. Despite the fire pit, the fire department showed up. The village no longer repairs the scorched hole in the middle of the street (they've given up). Traditionally everyone in our dysfunctional family circle brings a dip out to munch on while the more foolish ones burn things. This year I am making a white bean and pesto dip. This one is a breeze:

Ingredients:
3 15oz cans white beans (cannellini) drained
1 8oz (about) jar of pesto
Juice from 1/2 lime
1 clove garlic

Put everything into a food processor and hit the mutilate button. If your food processor doesn't have a mutilate button, you can just run it on high until it becomes a beautiful thick paste. I serve mine with wholewheat pita chips (they're a little heartier) and Corona. Enjoy!
